Zucchini, potatoes and quinoa veggie burger is a healthy and genuine receipe that can be presented as a tasty second course with a side of salad or mixed vegetables stir-fried. Or, as in this case, it can be used as a filling of delicious cereal sandwiches. It’s a perfect solution even for children because it’s rich in flavor and very easy to cook.
25 g of quinoa
1 cup of zucchini, shaved or chopped
2 medium potatoes
3 tablespoons of shaved Grana Padano cheese
2 tablespoons of breadcrumbs
extra virgin olive oil
Boil the potatoes until tender and let them cool.
Cook the quinoa in a small pot with salted water.
As soon as it’s cooked, drain it with a fine mesh strainer and place it in a bowl.
Add the peeled potatoes and mash them with a fork.
Wash the zucchini and cut it in half; half shaved, and half cut into thin slices, then grill them.
Get a homogeneous mixture of quinoa, zucchini and potatoes.
Add salt, pepper and a teaspoon of turmeric powder.
Add the egg, grana padano cheese and the breadcrumbs.
Knead with your hands until you get a moulding mixture of the size you prefer.
Take a non-stick pan, grease it lightly with olive oil and cook the burgers on both sides.
Place a few slices of tomato, grilled vegetables and the burgers, still warm on each sandwich and serve them.
