Usually when we talk about pancakes, we think of a sweet taste; but the salty variation is ideal for a fresh and light lunch, an aperitif or a delicious dinner. In particular, we introduce beetroot in the kitchen. This vegetable has got many properties. It’s rich in antioxidants, strengthens the immune system and it helps controlling the blood sugar level.

Ingredients
  • 250 g of pre-cooked beetroot

  • 30 g of rice flour

  • 30 g of spelled flour

  • 20 g of egg whites

  • 100 g of speck

  • grana cheese flakes

  • 1 teaspoon of shaved grana cheese

  • half a teaspoon of baking soda

  • lemon juice

  • salt

Preparation

Reduce pre-cooked beetroot into pulp using an immersion mixer.

Add ¾ of egg whites and whisk the remaining ones. Add the flour, a teaspoon of grana cheese, a pinch of salt and mix well.

Then initiate the bicarbonate with the lemon juice and stir. Meanwhile, put a saucepan with oil to heat on the stove.

Fill it with half of the mixture obtained and cook over medium heat with the lid for 6/7 minutes.

Turn it into the saucepan. As soon as cooked on both sides, season it with speck and grana cheese as preferred.
